- A ten to twelve-course meal that includes an appetizer, light dish, side dishes, a boiled dish, a broiled dish, the main course, a palate-cleansing dish, eel and rice or other seasonal rice, a beverage, sweets, and green tea.
- Each dish is prepared by hand with seasonal ingredients, mainly from Iwate, including short-horned cattle beef and Oshu beef.
